Congratulations, Chili Champions!

All three of the Souper Heroes events hosted by the Worthington Farmers Market at the indoor market were huge sucesses, but none more so than the Chili Cook-Off finale! 17 chilis were entered!

Congratulations to our Judge’s Choice, People’s Choice and Honorable Mention Winners! Each took home a swag bag of market merchandise and gift certificates.

Joel Gottke - Smokey Chili, Perla Martinez - Texas Style Chili, Kathy Woodard - ColOhio Green Chili, and Steve Deerwester - “Thicc” Chili. Excellent!

Our heartfelt thanks and appreciation for everyone who participated in any and all of the Souper Heroes events — soup/chili makers and eaters, volunteers, judges, staff, media — and, most importantly — everyone who contributed to the “Donation Crock.” Together, we raised nearly $2,600 for the Worthington Resource Pantry!

Souper Heroes will return to the indoor market for the 2024-25 season. Stay tuned!

In the meantime, if you’d like to host a Souper Heroes event for your favorite hunger relief agency (or know of a great venue), contact Karen at wfmassistantmarketmanager@gmail.com.

MADE FROM THE MARKET

Maple Bourbon Braised Short Ribs from Green Plains Bison Ranch (Booth #24A, High St. - West)

Ingredients

3 lbs. Green Plains Bison short ribs

Kosher salt and freshly ground black pepper

1 tablespoon black walnut oil (or substitute olive oil)

1 yellow onion, diced

4 cloves garlic, minced

3/4 cup bourbon (plus a little extra for the chef)

1/2 cup maple syrup

2 1/2 cups bison bone broth, plus more as needed

1 sprig of fresh rosemary

2 tablespoons tomato paste

1 tablespoon Worcestershire sauce

Directions

Preheat the oven to 325 degrees F

Pat the short ribs dry and generously season them with salt and pepper. In a 5-quart Dutch oven warm the oil over medium-high heat. Working in batches, sear the short ribs until brown on all sides. Add more oil as necessary. Transfer seared ribs to a plate.

Reduce the heat to medium. Add onion and cook until softened. Add garlic and cook for about one minute. Add the bourbon and maple syrup and cook until reduced by half. Stir in broth, rosemary, tomato paste, and Worcestershire sauce.

Place the short ribs in the sauce. The ribs should be covered with liquid. Add more broth, or water, as needed.

Increase the heat to medium-high and bring to a boil. Cover and transfer to the oven, gently stirring every 45 minutes. Cook for 2 to 3 hours until the ribs are very tender. Separate the meat from the bone and serve atop mashed potatoes or polenta with a healthy amount of sauce.
