Veggie Spy & Versatile Vegan

A Peek at the Leek! Leeks are related to onions and garlic and have been cultivated for thousands of years. They were prized in both ancient Rome and Egypt for their taste, medicinal properties, and they were even thought to increase athletic prowess. Leeks are the national symbol of Wales and on the annual St. David’s Day celebration people proudly wear badges with leeks on them!

Leeks resemble spring onions but with much wider leaves. They have a distinct flavor that is both onion-like but also different. The leaves have a pleasing velvety texture when cooked. Leeks from the Market are sure to be fresher than what you find at the grocery store. The Versatile Vegan suggests you take advantage of that and make this Creamy Vegan Mushroom Stroganoff. You can get the mushrooms from several producers at the Market including Marion Mushroom, Mayapple Farms, and New Path Farm!

Potato leek soup is the most well-known leek dish and this creamy vegan version is a winner.  Or dazzle your friends with this Vegan Leek and Potato Pizza. Get some fresh leeks at Drift Hills!

Other Finds

We have more strawberries! Moreland Fruit Farm and Raber Family Organics are joining 9N Farm in offering the sweet red delights. Raber Family Organics also hopes to have zucchini. The Punctual Pea Producer award goes to  Franklinton Farms who now have snap peas. And there are also radishes, kohlrabi, beets, and tons of greens from multiple growers!
