Veggie Spy & Versatile Vegan

Another Sign of Spring – Rhubarb!

Rhubarb is a cold-loving winter crop that typically becomes available in April. It has thick red or pink stalks that resemble celery, though they are unrelated. Rhubarb has been used for medicinal purposes for thousands of years. In the 18th Century rhubarb powder was worth twice as much as opium!

Rhubarb stalks are edible, but the leaves are not. Stalks are extremely tart when eaten raw and are often dipped in honey or sugar. When cooked, rhubarb is still quite tart, though with a hint of sweetness and citrus. It pairs well with fruit and is popular for pies, tarts, crumbles, jams, and sauces. The Versatile Vegan suggests this delicately flavored Vegan Rhubarb Bread that looks and tastes wonderful! Or, get some apples from Gillogly (outside in the south parking lot) or Moreland Fruit Farm and prepare Apple Rhubarb Crisp. Another winner is Vegan Rhubarb Bars that have a layer of shortbread topped with creamy rhubarb curd. There’s extensive background on rhubarb including storage tips and more recipes here!

You can get rhubarb stalks at Raber Family Organics (outside in the south parking lot) andFranklinton Farms.

Sustainability Star - New Path Farm

This month's Sustainability Star shines bright on New Path Farm! Offering mushrooms, microgreens, and duck eggs, owners Matt and Alicia are champions of sustainability in every aspect of their operation.

From reusable plastic containers for mushrooms and microgreens to taking back and reusing duck egg cartons, they're leading the way in eco-friendly packaging. Plus, for those who need bags, compostable options are available! Now, they're even exploring cardboard alternatives for their mushroom containers. True sustainability means constant innovation!

Supporting vendors like New Path Farm (Booth #21. West Corridor) not only guarantees the freshest produce but also contributes to a greener planet for future generations. Swing by their booth this weekend at the Worthington Farmers' Market and join us in applauding their dedication to sustainability!

The Sustainability Star program is possible thanks to SWACO’s Waste Reduction Grant awarded to The Worthington Partnership Green Team. Solid Waste Authority of Central Ohio - SWACO
