SNAP/EBT & Produce Perks

You can build a soup from scratch, no recipe needed!

Here’s is a basic template to make 6-8 servings:

  • 2-3 tbsp of a fat, like butter or oil

  • 3-4 cups of aromatics (onions, garlic, carrots, celery, or leeks)

  • 6-8 cups of a base/broth (like veggie broth, chicken broth, stock, tomato puree, or milk/cream

  • 2-3 cups of veggies (like zucchini, broccoli, cauliflower, peas, green beans, peppers, potatoes, turnips, etc!)

Steps:

  • 1. Chop your veggies

  • 2. Saute your aromatics and spices in the fat for 2-3 minutes

  • 3. Add broth and bring it to a boil

  • 4. Add your veggies and reduce to a simmer. You may need to stagger things that take longer to cook first (ex: 10-15 minutes for potatoes) and add things that cook more quickly last (ex: 2 minutes for greens).

  • 5. Simmer until all the veggies are tender

  • 6. Enjoy!
