VEGGIE SPY & VERSATILE VEGAN
This Week’s Featured Veggie: Miner’s Lettuce!
Miner’s lettuce (or claytonia) is a crisp and refreshing green that is an excellent addition to any salad. Native to the west coast of North America, it was a common ingredient for many Native peoples. Miner’s lettuce grows well in disturbed earth, so it was easy to find during the California Gold Rush. Most miners never found any gold and became completely broke. They followed the guidance of Native tribes to survive and ate the miner’s lettuce they could easily pick themselves. You can get delicious and nutritious miner’s lettuce at Franklinton Farms.
The Versatile Vegan suggests trying this Claytonia and Arugula salad with apples from Gillogly or Moreland Fruit Farm. Or enjoy some Miner’s Lettuce Pesto!
The Market is Hyper-Local!
Supporting local farmers and food artisans is a bedrock principle of our Market. When producers use ingredients from other Market vendors, that’s hyper-local! Hat’s off to Liege Belgian Waffles for using products from Silver Bridge Coffee for their awesome coffee waffles!
Get a Taste of Summer with Sweet Corn Microgreens!
The January blahs are a bit more tolerable when your palate enjoys real sweet corn taste courtesy of sweet corn microgreens from Seven Acre Farm! It has three phases of flavor that peak with sweet corn.
Microgreens (or shoots, which are quite similar) are young vegetable greens grown from seeds that are approximately 1–3 inches tall. They usually have a stronger, more concentrated and complex flavor than the mature plant. Also, most microgreens typically contain from 4 to 40 times more nutrients than are found in the mature leaves of the same plants! Microgreens are also available from New Path Farm.
